I love my crockpot. I love everything about crockpot cooking. I found this recipe on Pinterest and decided today would be a perfect day to throw it all together. Before you start this, keep in mind that you need a good 6 hours to let this simmer. When I originally started this I had plans to double the recipe so there’d be plenty for 3 people with some leftovers. I read the comments in the YouTube channel and someone had said that if you doubled it, would it need to simmer for 12 hours? I can say, from firsthand experience today, that you do not need to double the simmer time in your crockpot. I started this at about 12:30 (with my chicken being frozen) and by 6:45pm, the chicken was falling apart as I stirred everything together. It was incredibly tender. I did turn my crockpot on high, worried that because the chicken was frozen and I was doubling it I needed to “speed the process” up so to speak. While that may have helped, it also did burn some of the food into the sides of the crockpot. I soaked it with soap & water later after transferring the leftovers to a Tupperware bowl and it came off just fine.
What you need:
1 pound chicken breast
1 box of stuffing
1 cup of chicken broth
1 can of cream of chicken
1/2 cup of water
Layer bottom of crockpot with you chicken and pour 1 cup of broth over chicken. Mix the box of stuffing together with the can of cream of chicken soup and 1/2 cup water, and scoop onto the chicken. Cook 6-8 hours on low! (I’d recommend going no longer than 7)
The stuffing mix had turned into a very yummy, thick gravy. Salt & pepper to your liking, and enjoy!
